Sattvic Garden Herb Pasta

Ingredients

Directions

Cook pasta according to package instructions. 

Warm ghee or oil in a pan. 

Add cumin and coriander seeds and gently toast. 

Add seasonal vegetables and salt. Sauté lightly until tender. 

Blend herbs, lemon juice, seeds, oil, and splashes of pasta water (1 tbsp at a time) as needed into a fresh herb sauce.

Toss cooked pasta with vegetables and herb sauce. 

Garnish with more fresh herbs and lemon zest as desired

Notes

This garden herb pasta is especially supportive in summer, when the body benefits from meals that are nourishing, satisfying, and rich with fresh seasonal prana. Soft-cooked vegetables, fresh herbs, quality grains, healthy fats, and gentle digestive spices combine to support Ojas while staying light enough for warm weather. The fresh herbs bring cooling, uplifting qualities, while the warming spices protect Agni and support comfortable digestion.

Pasta / Whole Grain Noodles Quality grains like wheat, spelt, or whole grain noodles offer grounding nourishment and steady energy. Their sweet taste supports tissue building and stability, making them beneficial for Vata and healthy Ojas. Pairing grains with herbs, vegetables, and digestive spices keeps the meal balanced and prevents heaviness. Those with slower digestion or elevated Kapha may prefer lighter portions and more vegetables.

Summer Vegetables A blend of seasonal vegetables—zucchini, fresh greens, peas, cherry tomatoes—brings cooling, hydrating, and lightly cleansing qualities. Zucchini replenishes fluids and soothes Pitta without heaviness, while lightly cooked greens support digestion, circulation, and Kapha balance. Peas add gentle plant-based nourishment, and tomatoes bring brightness and stimulate Agni, though they can be reduced for those with significant Pitta or heat sensitivity. Cooking vegetables until soft eases digestion.

Fresh Herbs A blend of basil, cilantro, and parsley brings cooling, aromatic, and uplifting qualities to the dish. These sattvic herbs support digestion, reduce internal heat, and add freshness, vitality, and prana while balancing the heavier qualities of pasta and fats.

Lemon Bright and gently stimulating, lemon awakens Agni and enhances nutrient absorption. Its sour taste adds vibrancy, and balanced with cooling herbs it can be enjoyed in summer without excess heat.

Olive Oil or Ghee Healthy fats provide lubrication, nourishment, and support for Ojas. Ghee carries nutrients into the tissues and strengthens digestion, while olive oil offers a lighter, cooling alternative well suited to summer.

Digestive Spices (Cumin, Coriander, Fennel) This trio gently kindles Agni and eases the digestion of grains and vegetables while keeping the meal cooling and comfortable for summer. Cumin warms and grounds, reducing gas and bloating; coriander cools and balances that warmth while pacifying Pitta; and fennel soothes the digestive tract and settles both Vata and Pitta. Together they support comfortable digestion without adding excess heat, making them ideally suited to a light, warm-weather dish.

Vata — Neutral to Pacifying: Soft-cooked vegetables, grains, healthy fats, and digestive spices balance Vata’s dry, light, mobile qualities. Grounding pasta with olive oil or ghee supports Ojas, while fresh herbs add prana and lightness. Best enjoyed warm with adequate moisture.

Pitta — Pacifying: Cilantro, basil, parsley, zucchini, fennel, coriander, and lemon offer cooling, Pitta-balancing qualities that offset the warmth of pasta, oil, and spices. Supportive during hot months when Pitta accumulates.

Kapha — Neutral to Aggravating in Excess: Pasta, grains, and fats can feel heavy in large portions or with sluggish digestion. Fresh herbs, bitter greens, lemon, and spices maintain lightness. Kapha types benefit from more vegetables, less oil, and extra herbs or spices.
