Preheat oven to 350°F (175°C).
If the dates are firm, soak in hot water for 5–10 minutes, then drain well.
Add dates, tahini, melted ghee and egg to food processor and blend until mostly smooth.
In a separate bowl, combine oats, oat flour, fennel, cardamom, cinnamon and salt.
Mix wet and dry ingredients together. Add warm oat milk, 1 tbsp at a time, until you have a soft dough.
Scoop 1 rounded tablespoon of dough onto a lined baking sheet and gently flatten.
Bake for 10–12 minutes, until just set and lightly golden.
Cool before serving.
These cookies are designed for the transition from late summer into early fall, when we want to continue alleviating accumulated Pitta while beginning to provide more grounding and nourishment for Vata. The combination of sweet taste, healthy fats, and nourishing grains provides stability and supports Ojas without making the recipe overly heavy.
Oats provide grounding, nourishing qualities that support Vata and help create sustained energy. Their soft, cooked quality makes them especially supportive during the seasonal transition.
Dates offer naturally sweet, building nourishment that supports Vata and Ojas. Their moist, grounding qualities balance the dryness that can begin to increase as the seasons shift.
Tahini & Ghee provide healthy fats and unctuousness to nourish the tissues and support Ojas. They help balance Vata’s dry and light qualities, while the moderate amounts keep the recipe from becoming excessively heavy for Kapha.
Fennel offers a gentle cooling quality that helps alleviate Pitta while supporting comfortable digestion. Its aromatic, slightly sweet qualities make it particularly well suited to late summer.
Cardamom adds lightness and aromatic warmth while supporting digestion. It helps balance the heavier qualities of oats, dates, tahini, and ghee without introducing excessive heat.
Cinnamon provides gentle warmth and supports Agni and digestion. Because only a small amount is used, it adds digestive support without making the recipe excessively heating during the warmer transition period.
Mineral Salt enhances flavour and gently supports digestion while balancing the sweet and nourishing qualities of the cookies.

Vata — Pacifying: Oats, dates, tahini, ghee, and the sweet taste provide grounding, moisture, and nourishment to balance Vata’s dry, light, and mobile qualities. Fennel and cardamom support comfortable digestion, making these a supportive snack as Vata begins to accumulate.
Pitta — Pacifying: Fennel provides a gentle cooling quality, while the moderate use of warming spices keeps the recipe balanced. The naturally sweet taste and nourishing ingredients help soothe Pitta without relying on heavily heating spices.
Kapha — Neutral to Aggravating in Excess: Oats, dates, tahini, and ghee are nourishing and can become heavy when eaten in excess. Kapha types may benefit from smaller portions and can emphasize the fennel and cardamom while keeping the ghee and tahini moderate.
