Warm 1 cup milk or water (or mixture of both) in a saucepan to just boiling. Add oats, spices, ghee and salt. Lower to simmer for 5-10 minutes or until oats are fully cooked and a porridge-like consistency is obtained.
Add raisins or chopped dates. Let sit 5 more minutes so fruit can soften and oats cool slightly before serving. Add additional milk or water if needed for desired creaminess.
NOTE: You can make this recipe with all water, all milk or a mixture. Using more milk makes the recipe heavier, more unctuous and is best for Vata & Pitta. Kapha should use all water.

Vata — Pacifying: The sweet taste of oats, dried fruit and milk provide grounding, moisture, and nourishment to balance Vata’s dry, light, and mobile qualities. Cinnamon and cardamom support comfortable digestion for Vata dosha.
Pitta — Pacifying: Cardamom, ghee and milk provide a gentle cooling quality to this recipe. Cinnamon can be reduced if pitta is particularly high. Oats and fruit help ground Pitta’s fire.
Kapha — Aggravating: The sweet taste, which is prominent in this recipe, can become heavy when eaten in excess. Kapha will benefit from smaller portions and can emphasize the cinnamon, and add a pinch of clove, while keeping the ghee moderate, minimize fruit, and swapping milk for water.
