Directions
This dish is especially supportive for late summer when the body will benefit from steady nourishment. Amaranth is deeply strengthening and mineral-rich while remaining naturally gluten-free and relatively light. Paired with gently stewed rhubarb, digestive spices, and healthy fats, this breakfast supports sustained energy, healthy digestion, and balanced blood sugar. The sweet, sour, and aromatic qualities create a meal that is grounding, cooling, and gently invigorating without being heavy.
Amaranth
A highly nourishing ancient grain, amaranth is sweet and slightly astringent, making it deeply rebuilding for the tissues while remaining lighter than many breakfast grains. Rich in minerals and protein, it supports strength, stamina, and stable energy. Its warming quality benefits Vata, while cooking it into a soft porridge makes it easier to digest for all constitutions.
Rhubarb
Naturally sour and slightly astringent, rhubarb provides gentle cleansing support for the liver and digestive tract while offering a refreshing cooling quality for warmer months. Cooking softens its sharpness, making it much gentler on digestion while preserving its bright, seasonal character.
Cardamom — Aromatic, sweet, and gently cooling. Supports healthy digestion, reduces bloating, and prevents the heaviness that can accompany creamy breakfasts.
Cinnamon — Gently warming and circulatory. Stimulates Agni, supports balanced blood sugar, and offsets the cooling qualities of fruit without aggravating Pitta when used lightly.
Vanilla — Sweet, calming, and nourishing to the nervous system. Adds softness and comfort while complementing the digestive spices.
