Preheat oven to 400 degree F. Line a muffin pan with unbleached paper cups.
Warm buttermilk or cream in a sauce pan over low heat – DO NOT BOIL. Whisk in sugar, ghee/butter, and lime juice.
In a medium bowl, combine flour, spices, baking powder, baking soda and salt. Fold in liquid ingredients until blended – batter should be lumpy.
Fold in apples and almonds.
Spoon batter into muffin tins evenly.
Bake for 15-20 mins until golden brown.
Let cool and serve with extra ghee on top and sprinkle of cinnamon!
