Chocolate Gingerbread Cookies

Directions

1. Preheat the oven to 350 degrees. Line a large baking sheet with parchment paper and set aside.

2. In a large mixing bowl, combine the flax meal with six tablespoons of warm water. Let sit for about five minutes to gel. Add the molasses and tahini. 

3. Add the cacao, ginger, cinnamon, cloves, nutmeg, and black pepper. Stir to combine. 

4. In ¼-cup increments, add the flour, then the salt, baking soda, and baking powder, stirring to totally incorporate all the dry ingredients. The dough should be stiff and slightly sticky. 

5. Place a heart-shaped cookie cutter on the prepared baking sheet. Use a spoon to fill the center of the cookie cutter and press down with your fingers to fill the shape evenly. 

6. Repeat for the remaining dough, leaving about an inch of space around the cookies (they will expand in the oven). Top each cookie with chopped ginger and gently press so it sticks. 

7. Bake the cookies for about 18 minutes, rotating the pan halfway through. The cookies should be somewhat firm to the touch with cracks on the top and a smooth bottom. Don’t overbake!

8. Let cool on the pan for a few minutes before transferring to a wire baking rack to cool. Enjoy with your favorite tea or warm drink, and store in an airtight container for up to 1 week.

Notes

Notes: If you don’t have a heart-shaped cookie cutter, you can simply scoop tablespoon-sized balls of dough onto the cookie sheet. Depending on the size of your cookies, the bake time may differ, so start with 12 minutes and add from there so as to not overbake.

Gingerbread has a unique flavor, and the spices that comprise it, are an ideal support for agni any time of year, but especially in the winter months when digestion can be variable to slow.

This recipe is for anyone who wants to share a treat while honoring digestion. These cookies for a gesture of food-love that’s as delicious to give as it is to receive. 

Dosha Type

This recipe is heavy and warming. It is most balancing to vata dosha. 

Tahini, molasses and sugar aggravate kapha dosha on their own, however when combined with these heating spices, kapha can enjoy these cookies in moderation. 

They heavy quality balances pitta dosha, however the heating quality aggravates the fire element. These cookies should only be enjoyed in the cooler months for pitta dosha.
