Pumpkin Seed Pistachio Ojas Balls

Ingredients

Directions

  1. Add all ingredients to a sturdy food processer and pulse until the mixture begins to come together. You may need to scrape the sides with a spatula to ensure proper blending. The nuts and seeds should be fully ground and the mixture should be slightly lumpy.
  2. Using a 1 tablespoon measuring spoon, scoop out about 1-inch round proportion of the mixture. Using your hands, roll into a small ball. If the mixture does not stick together easily, add more ghee to the whole mixture and pulse in food processer again. 
  3. Continue rolling into balls until complete. 
  4. You may refrigerate for up to 1 week – the balls will become more cohesive in the refrigerator after 1-2 hours. 

Notes

Pumpkin seeds are an excellent form of vitamins and minerals such as Vitamin E, Vitamin A, Vitamin K, Zinc, Magenisum and Iron. They are considered cooling and light. Pistachios are an excellent source of Vitamin B6, Copper and Potassium. Dates are also an excellent source of Vitamin B6 and Vitamins C, K and Potassium. The combination of these power-house nutrient sources help to boost ojas, or the strength, vitality and immunity of the body. 

Cultured ghee is a healthy saturated fat that helps to balance HDL/LDL profiles, especially in those with cholesterol already in a healthy range. 

Cinnamon and cardamom are excellent digestive aids and help to enhance the polyphenol and antioxident content of this nutritious snack. 

Cacao enhances the overall flavor while also enhancing the nutrient profile with Vitamins C, D, A & E as well as Magnesium, Iron and Potassium. 

Salt add a hint of savory to this delicious and nutritious snack. Enjoy!
