Sattvic Coconut Rice with Summer Vegetables

Ingredients

Directions

Rinse basmati rice thoroughly until water runs clear. 

Warm ghee/coconut oil in a pot and gently toast cumin, coriander, and fennel seeds until fragrant. 

Add rice and stir gently to coat. 

Add coconut milk, water, turmeric, and salt. 

Bring to a boil, then reduce heat and simmer covered until rice is soft and fluffy (10-15 mins).

Lightly steam vegetables until tender while keeping their colour and vitality. 

Fold vegetables into the coconut rice. 

Finish with fresh cilantro, basil, lime juice and zest, and optional toasted coconut.

Notes

This coconut rice is especially supportive in summer when heat, dryness, and overexertion begin to deplete the body’s fluids and Ojas. The combination of cooling coconut, sweet basmati rice, seasonal vegetables, fresh herbs, and gentle digestive spices creates a meal that is nourishing without being heavy. It replenishes energy, supports hydration, and protects Agni while helping to balance the naturally warming qualities of the summer season.

Basmati Rice

Basmati rice is one of Ayurveda’s most sattvic grains. Naturally sweet, light, and easy to digest, it provides steady nourishment while remaining gentle on the digestive system. Its balancing qualities make it appropriate for all three doshas and an ideal foundation for summer meals when digestion may become more sensitive.

Coconut Milk
Deeply cooling, unctuous, and nourishing, coconut milk is one of Ayurveda’s most supportive foods for balancing excess Pitta. Its sweet and cooling qualities help replenish fluids, lubricate the tissues, and calm the nervous system while adding gentle richness to the meal. Coconut milk also helps build Ojas, making it especially beneficial during long, hot summer days.

Zucchini
Cooling, hydrating, and easy to digest, zucchini provides gentle nourishment while supporting healthy hydration. It’s soft, sweet qualities help soothe excess Pitta and contribute moisture without burdening digestion.

Green Beans
Green beans are light, mildly sweet, and slightly astringent. They provide gentle nourishment while supporting digestion and maintaining balance during warmer months. Their light quality helps prevent the meal from feeling overly rich.

Peas
Sweet and nourishing, peas provide plant-based protein while remaining relatively light when well cooked. They support healthy tissue building while contributing softness and satisfaction to the meal. Cooking them thoroughly with digestive spices improves their digestibility.

Carrots
Naturally sweet and grounding, carrots offer gentle nourishment while supporting healthy digestion. Their sweet post-digestive effect helps build the tissues without creating heaviness, while their vibrant colour reflects their abundance of nourishing plant compounds.

Fresh Herbs

Fresh herbs are one of the simplest ways to elevate the sattvic quality of a dish, bringing living prana, vibrancy, and clarity to the finished plate. Cooling cilantro cleanses and pacifies Pitta while easing internal heat, and aromatic basil adds a gentle warmth that supports digestion and circulation. Together they create a light, pure herbal profile perfectly suited to summer eating.

Lime Zest
Fresh lime zest brings brightness, aroma, and subtle digestive stimulation. Its uplifting fragrance awakens the senses while complementing the cooling qualities of the coconut and herbs without creating excessive heat.

Ghee or Coconut Oil
Ghee nourishes the tissues, supports Ojas, and enhances the absorption of nutrients while gently strengthening Agni. Coconut oil offers a cooling alternative that further supports Pitta balance during the heat of summer.

The Digestive Spice Blend
Cumin, coriander, fennel, and turmeric create a balanced digestive formula that gently awakens Agni without creating excess heat. Together, they improve digestion, reduce gas and bloating, support nutrient absorption, and ensure this nourishing meal remains light, comfortable, and easy to digest despite the richness of coconut milk.

Vata — Pacifying — Basmati rice, coconut milk, cooked vegetables, and healthy fats add warmth, moisture, and stability to counter Vata’s dryness and irregularity. Gentle digestive spices support Agni, and serving warm deepens the grounding effect.

Pitta — Pacifying — Coconut milk, zucchini, cilantro, coriander, fennel, and summer vegetables cool excess heat and replenish fluids. The mild warmth of cumin and basil is balanced by cooling, sweet, hydrating ingredients—an ideal summer meal.

Kapha — Neutral to Aggravating in Excess — Basmati rice and spices keep it fairly light, but coconut milk and rice’s sweetness turn heavy in large portions. If Kapha is elevated: use less coconut milk, add more vegetables and warming spices (cumin, coriander, ginger), and keep portions moderate and warm.
