Sesame Ginger Miso Bowl

Directions

  1. Place quinoa in a bowl and add arugula, carrot, edamame, avocado, cucumber, nori and sprouts. 
  2. Drizzle with dressing and top with sesame or hemp seeds, fresh mint, sliced scallions. 
  3. Dressing: In a blender or food processor, combine all ingredients and blend until smooth. Refrigerate in an airtight container for up to 5 days. 

Notes

This recipe is a six taste bowl. Six taste bowls fulfill the six tastes of Ayurveda and leave you nourished on a cellular level. Keep pre-cooked grains, legumes and sweet potatoes on hand and you’re only minutes away from a healthy, satisfying meal. 

Six-taste bowl components: 

Hearty Base: SWEET 

quinoa, barley, brown rice, starchy vegetables: sweet potato, pumpkin, winter squash, carrot, beet 

Healthy Fats: SWEET 

Avocado, coconut, almonds, cashews

Oils: olive, sesame, coconut avocado 

Colorful Veggies: BITTER 

Leafy greens: spinach, arugula, collard, kale 

Cruciferous vegetables: cauliflower, broccoli, cabbage, Brussels sprouts, zucchini, snow peas, bell pepper, cucumber 

Spices and Aromatics: PUNGENT 

Cumin, turmeric, ginger, asafetida, black pepper 

Allium vegetables: garlic, onion, leek scallion, shallot 

Plant Protein: ASTRINGENT 

Legumes: lentils, black beans, chickpeas, adzuki beans, adamame 

Nuts and seeds: almonds, sunflower seeeds, chia seeds, glax seeds, walnuts, tahini 

Garnishes: SALTY, SOUR, ASTRINGENT 

Sea salt, coconut aminos, sea vegetables, celery, lime, lemon, apple cider vinegar, cilantro, dill, sprouts, microgreens, sesame seeds, chia seeds 

In this recipe: 

SWEET: Quinoa or rice

SOUR: Lime (dressing)

SALTY: Nori, miso (dressing)

BITTER: scallions, arugula, spinach, cucumber 

PUNGENT: Garlic (dressing), ginger (dressing)

ASTRINGENT: Sesame seeds, edamame, sprouts
