Spiced Pumpkin Seeds

Ingredients

Directions

  1. Warm ghee/oil in medium-sized sauté pan over medium-low heat
  2. Add pumpkin seeds and stir to coat in ghee
  3. Sprinkle garam masala and salt on top and stir well in pan to coat every seed.
  4. Continue to sauté over a low heat – moving seeds around every 15-20 seconds to avoid burning – until seeds are light brown and fragrant 
  5. Immediately remove from heat and place in heat-resistant bowl. 
  6. Allow to cool for 3-5 mins before consuming.
  7. Add additional salt to taste, if needed.
  8. Enjoy!

Pumpkin seeds are nutritional powerhouses packed with several key benefits:

  • Rich in magnesium, which supports bone health, mood, and sleep
  • High in zinc for immune function and skin health
  • Contains heart-healthy omega-3 fatty acids
  • Good source of plant-based protein (about 7g per ounce)
  • Provides iron to help prevent anemia
  • Contains antioxidants that may reduce inflammation
 
Garam masala is moderate spice that helps with digestion and absorption of the pumpkin seeds. 
 
Using high-quality mineral salt helps to enhance the nutritional profile of this snack, in addition to boosting digestion, enhancing the flavor profile and supporting healthy water and electrolyte balance.
 
You can top your kitchadi with spiced pumpkin seeds or sprinkle over our butternut squash soup!

Dosha Type

This recipe is ideal for Vata Dosha and during Vata season. Pitta may enjoy in Vata season as well. In summer, Pitta may wish to use just cardamom and coriander and white Himalayan salt, as these ingredients are more cooling. Kapha may enjoy in moderation or with reduced ghee/oil (1 tsp) content.
