Make the Dough:
Combine flour, salt, baking powder, fresh herbs, cumin, and turmeric. Rub in ghee until crumbly. Stir in yogurt. Gradually add warm water to form a soft dough.
Rest the Dough:
Cover and let rest for 10–15 minutes.
Roll & Cook:
Divide dough into 6–8 portions. Roll each portion into a thin circle, about 1/8 inch thick. Heat a skillet over medium heat, brush lightly with ghee, and cook 2–3 minutes per side until golden and slightly puffed.
Serve:
Serve warm at holiday gatherings with lentil stews, chutneys, roasted vegetables, or Ayurvedic curries. Brush with extra ghee if desired.

Pitta Increasing (in excess): Warming spices can increase Pitta in large amounts; moderate portions or milder herbs balance heat.
