Chia Coconut Pudding

  1. In a medium bowl, stir together the coconut milk, chia seeds, coconut flakes, pistachios, maple syrup, cardamom, and vanilla.
  2. Allow the mixture to sit for 1 hour, until the chia seeds are expanded and soft.
  3. Scoop the mixture into a small saucepan and heat on low for 1-2 minutes, just until warm.
  4. Garnish with rose petals and enjoy.

Notes

Chia seeds have many benefits; they promote endurance and strength, and they are moist and grounding. The pudding has a lubricative quality that is good for digestion. The combination of ingredients and spices make for a lovely way to soothe pitta.

This is best for pitta for vata/pitta type conditions. It can soothe inflammation and painful chewing.
