  3. Add remaining ingredients. Make sure all ingredients are covered by at least 1-2 inches of water (add more water as needed).
  4. Bring to a boil.
  5. Lower to a low simmer & cover for 6-12 hours, watching closely.
  6. Turn off heat and let cool for 1 hour.
  7. Season with additional salt and pepper if desired.
  8. Strain and store in refrigerator for 5-7 days maximum, or freeze for up to 30 days.
  9. Sip bone broth directly or use as an alternative to water in Traditional Kitchadi and other soup recipes.

Notes

Slowly cooking bones and aromatics offers a remarkable array of benefits to the body, mind & soul.

At its core, bone broth is a masterclass in bioavailability – the body’s ability to absorb nutrients efficiently. During the simmering processing, bones release collagen, which breaks down into readily absorbable amino acids, or essential proteins that serve as building blocks for our own body’s collagen production, supporting everything from supple skin to healthy joints. The slow cooking process also extracts glucosamine and chondroitin, compounds well-known for their role in maintaining joint health.

Bone broths also provide essential mineral content, including calcium and phosphorus, which leach from the bones during cooking, as well as trace minerals like zinc, iron, and manganese that become concentrated in the broth. When naturally paired with proteins, bone broths help to enhance mineral absorption.

Bone broth also contains compounds that directly support gut health. The gelatin and glutamine present help maintain the integrity of the intestinal barrier, while glycine supports healthy inflammation responses. This makes bone broth particularly valuable for those recovering from illness or dealing with digestive sensitivities.

Dosha Type

Bone broth is good for all three doshas, but especially Vata Dosha as well as anyone who is convalescing, recovering from illness or injury or simply looking to regain strength & stamina on their health journey.
