
Cut the zucchini into bite-size pieces. Cut the sweet potato in half and slice down the middle. Set aside.
In a baking tray, add the ghee and spread well.
Place the sweet potato and zucchini slices and season with the ground cardamon and salt.
Bake for 15-20 minutes at 350 degrees, or until slightly firm.
Serve immediately and top with fresh herbs, if desired.
Sweet potatoes are an excellent source of Vitamin A, which may protect skin from the sun, helping to prevent sunburn, dryness and wrinkles. It also may help to bring a nice glowing tint to your skin! Sweet potatoes are also a good source of Vitamin C, which creates collagen.
The lutein in zucchini encourages skin health by reducing inflammation responses. It also promotes skin hydration. Zucchini is also full of vitamin C and A.
Cardamom has anti-inflammatory and cleansing effects.
This recipe pacifies pitta and vata.
Vata benefits from the grounding effects of the sweet potato as well as the hydration from the zuchini. This recipe is baked which does result in less hydration than sauteed zucchini.
Pitta benefits the most from this recipe as it has an overall anti-inflammatory and cooling effect on the body fostering cleansing and cooling of the blood which supports skin health.
