
1. Heat oil in a heavy-bottomed soup pot.
2. Sauté onion and leeks for about 5 minutes.
3. Add the potatoes, garlic, spices, and broth.
4. Mix well.
5. Bring to a boil, reduce heat to simmer, and cover for about 20 minutes.
6. Make sure the potatoes are cooked until tender.
7. Final options: put it all in a blender until smooth, or keep it a hearty, chunky soup.

Vata: increase warmth: add more of the original spices
Pitta: increase cooling: add coconut milk or coconut cream, garnish with chopped cilantro and a squeeze of fresh lime juice
Kapha: increase stimulating: add more ginger, black pepper or even a chili pepper
