Potatoes and Cucumber with Cilantro and String Bean

Ingredients

Directions

  1. Boil potatoes in 1/4 tsp salt.
  2. Meanwhile sautee onions in oil. When clear, add garlic, string beans and cucumber.
  3. Continue cooking on medium heat. Stir carefully from the bottom up to avoid crushing the cucumbers as they get soft.
  4. Remove from heat.
  5. When potatoes are soft, gently stir them in with cucumber and string beans, adding remaining 1/8 tsp salt, black pepper and cilantro. 

Notes

Leave the skin on the potatoes as they contain fiber and other nutrients. Potatoes strengthen the immune system and protect the skin. Purple and yellow potatoes contain anti-oxidants that can reduce inflammation. 

Green beans contain Vitamin C which is an anti-oxidant that helps protect the skin from oxidative stress. 

Cilantro is anti-bacterial and anti-fungal. It is beneficial in treating skin conditions that stem from underlying inflammation.

This is a cooling nutritive recipe that will satisfy a pitta appetite in the summer months. It has alterative effects which means it cleanses and cools the blood. 

This recipe is grounding and easy to digest pacifying vata dosha. It increases the circulatory system thus supportive proper flow of vata throughout the body.
